Ceylon Arrack

Arrack is likely one of the oldest known distilled spirits in the world, though its origins are long lost to history. First written about in the 13th century by Marco Polo, Ceylon Arrack is still produced in a similar fashion today.

"Toddy Tappers" climb coconut palms in the cool morning air and cut through the flower stems in order to collect the sap in clay pots. This sap will naturally ferment in the heat of the day when it can then be distilled to make this unique spirit.
