Akashi-Tai is produced at the Akashi Sake Brewery which dates back to the Tokugawa Period of Japan when the company primarily traded is soy sauce and rice. In 1918, the company took advantage of its geographic location to move to producing sake.

The Akashi-Tai Brewery is located in the city of Akashi, famed across Japan for the delicious sea bream found nearby offshore. These fish are known in Japanese as Akashi tai, and this prized fish lends its name to the brewery and its image to their logo.
