Neige

Neige (French for 'snow') is an apple icewine from La Face Cachee de la Pomme. In 1994 François Pouliot, formerly a film producer, decided he wanted to produce wine instead and in pursuit of his passion purchased an old stone-built house with an accompanying orchard in Quebec, Canada. A year later, working with Christian Barthomeuf, the creator of the recipe, Pouliot developed and produced the first ice cider and named it Neige.

Neige is made from apples harvested in the autumn and pressed in the depths of Canadian winter. This apple juice is then kept outside in the freezing cold to naturally separate the sugar from the water and the resulting syrup is fermented for 6 months. Neige has seen huge success having won multitudes of awards, received its own appellation and is much loved around the world today.
