Sherry

Sherry is a style of fortified wine produced exclusively in the region of Spain surrounding the town of Jerez de la Frontera, from which the name Sherry derives. The neutral grape spirit to fortify the wine is added after fermentation completes with the result that Sherries are usually a drier style of fortified wine. Sherries are usually aged in barrels in a solera system, and do not generally benefit from ageing in bottle.
