Description:
The fruit is hand picked, whole bunch pressed, fermented in open top fermenters and the cap is plunged by hand. It undergoes pre and post-ferment maceration, occasionally there is addition of whole bunches and partial natural fermentation to increase complexity. This vineyard provides less generous conditions for pinot noir, requiring warm conditions in order to ripen the fruit to the quality required for this label. Only three vintages of this wine have been made, firstly in 1994, 1997 and most recently in 2003.
'Pinot Noir doesn't come much better than this, and that includes the big names of Burgundy, spiritual home of this cantankerous but captivating red. It's made from a single Yarra Valley vineyard, which was named nearly a decade ago by pickers who, because of the uneven, rugged terrain, had to hand-prune and hand-harvest unirrigated vines along the crest of a hill. While notoriously time-consuming, it can produce great Chardonnay and Pinot.'
