The rich oily texture and fullness, even though the wine is essentially dry, are the result of ripe grapes. Fermented in both stainless steel tanks and older oak barrels, with full malo-lactic fermentation to add complexity and texture. The wine was bottled in August 2004. Grape Variety: 100% Pinot Gris. Background: 2004 was an excellent season in Hawke's Bay. A warms summer was followed by a cool, wet February. A typically life-saving Indian summer gave beautiful warm dry March and April. The grapes were hand-picked at a good maturity level with a little botrytis influence, maximising and diversifying aromas and flavours. They were rapidly and gently whole bunch pressed to produce a rich, fruit driven wine with low phenolics.
