Background: The Pascal Jolivet Domaine covers 49.50 acres in Sancerre, with vineyards close to the villages of Bué, Verdigny and St Gemmme. 8.60 acres are planted with Pinot Noir. The Pascal Jolivet Rose is a blend of direct press and ‘saignée’ production method rosé wine. The juice is produced from macerated Pinot Noir grapes that have not been sorted by hand or de-stemmed.
