Description:
Deep ruby red in colour, this wine displays lifted ripe berry fruit and spice on the bouquet, complemented by leather and camphor wood characters. Prominent yeast autolytic aromas further add to this complex wine. The palate is soft and full bodied exhibiting complex flavours of black plum, mature oak and yeast autolysis, and shows subtle creamy oak, concentrated flavours and fine persistent tannins. It is liqueured to a point of richness, however the balanced palate finishes dry due to the natural tannins and acidity.

Grape Variety - 100% Shiraz

Winemaker's Notes - Select parcels of premium Shiraz completed ferment in new oak and were later transferred to old oak puncheons for around two and a half years. During this time, the wine developed a mellow complexity and was then prepared for tirage. Over the next five years, maturation on yeast lees continued to build character, complexity and depth. The resultant wine is a soft, complex style, which will further develop with up to three years on cork. This 1997 Sparkling Shiraz exhibits full value premium fruit, high quality oak and extended maturation. It is a benchmark of this uniquely Australian style.
