Background: It was at the Abbey of Hautvillers, during the 17th century, that Dom Pérignon devoted his life to perfecting champagne and spreading its renown. Three centuries later, the same quest continues through the wine that bears his name. The Chef de Cave selects vintages that perpetuate the Dom Pérignon style while ensuring the faithful expression of a particular year. Although each vintage follows its own curve as it matures on less, there are three peaks, or "plenitudes", when vintages express their very best. When the first plenitude is reached after 6 to 7 years, the Dom Pérignon style is well established. When it reaches its second plenitude, the wine enters the OEnotheque. Like a fascinating journey into the Dom Pérignon heritage, the OEnotheque offers an insight into the diversity, intensity and complexity of these wines, and into the mystery of their creation.
