Description:
Perle d'Ayala Champagne, the jewel of Ayala and in the ownership of the Bollinger Champagne House.

As clear as crystal, its colour is pale straw. Superb, fine and persistent mousse. At first there are aromas of wild flowers. The nose continues to evolve in the glass, with notes of fresh nuts, brioche and honey.

Round and harmonious on the palate, with aromas of cooked pears and apricots, and some spice. On the finish, the aromas come back, with elegant freshness and a great length.



Vintage 1999: 1999 was granted very good climatic conditions: from budding to flowering and in the development of the grapes. From June 10 to 13, the flower season was short and perfect. During the summer season, heavy showers alternated with hot weather.

In spite of heavy rainfalls during harvest, the result was impressive as far as both quality and quantity were concerned. This harvest is reminiscent of 1970 where the volume & the quality were both splendid. 1999 is another great Vintage for champagne lovers!

Blend of Grapes: 80% Chardonnay, 20% Pinot Noir.

Production: Made from 80% Chardonnay coming from the Côte des Blancs: It is sourced from Mesnil sur Oger (50%), Cramant (25%) and Chouilly (25%). These 3 villages ranked 100% on the échelle des crus scale. The 20% Pinot Noir comes from Aÿ.

Ageing: This wine has been aged for more than 6 years in the Ayala cellars. The real cork used for this long ageing permits the best control of oxidative ageing, and ensures good development of the aromas. It is a rare practice now in Champagne, and the bottle neck is known as 'bague carrée' (square ring).
