The pace of the mousse is superb. The nose is quite open and expressive with notes of citrus fruits and flowers. (Acacia & honeysuckle). Then when you remove the glass come some more complex aromas of brioche, lime tree and sandwich bread, which express elegance and finesse. Blend of Grapes: 100% Chardonnay. Production: Made almost exclusively from Grands Cru Chardonnay (from 3 villages which are rated at 100% on the échelle des crus scale, out of the 326 cru's of Champagne). It is sourced from Mesnil sur Oger (50%), Cramant (25%) and Chouilly (25%). Ageing: This wine has been aged for more than 6 years in the Ayala cellars.
